Sarah’s Test Kitchen: Fluffy Homemade Pancakes

I had a hankering for pancakes this morning, but I didn’t want to use a mix. I decided to try one of the recipes online. I’ve tried making pancakes from scratch before, but they always turned out heavy and doughy – and stiff. I mean, you could play frisbee with them.

So, I did it! I found a simple recipe and my pancakes were everything I desired. Take a look:

I had to to make a minor substitution. The recipe calls for buttermilk. I do not use dairy milk, so I added a tablespoon of lemon juice to some Almond milk. It probably affected the fluffiness and texture a little, but they were still really good and very satisfying. I also added about a teaspoon of nutmeg. Served with real maple syrup, this recipe is one I’ll definitely be using again!
